You can also use it to make jellies (800–1000 g/liter of juice), orange and other marmalades, and vinegar preserves. It can also be used to fill a berry pie (1 dl/5 dl crushed berries). In addition to granulated sugar, jam sugar contains pectin, the gelling substance of berries and fruits, which gives the jam a suitable firm structure. The potassium sorbate it contains improves the shelf life of the jam. Potassium sorbate is found naturally in e.g. in rowan berries. The color and aroma of the jam is best preserved in a cool place, but in the absence of cold rooms, the jam made with jam sugar can also be preserved at room temperature, protected from light.
