Green spotted lentils retain their shape very well when cooked. This lentil is therefore excellent for use in salads, soups, as an addition on its own or with rice/cereal rice. Lentils contain plenty of protein, fiber and slow carbohydrates. Lentils also cook significantly faster than other legumes and do not need to be soaked before cooking, just rinsing is enough.
