In the heart of South America, in a country where there is no need to use intensive farming, a nutrient-rich, slow-growing sugar cane of an old variety grows, the juice of which is gently squeezed. This juice is dried with a gentle heat and therefore all the important ingredients, vitamins and minerals of the sugar cane are preserved. The dried juice is then ground and bagged.
The sugar is not crystallized and no other additives are needed in its production, except for a small amount of calcium for final pH control. Virgin soil provides a good potassium/magnesium ratio, which is also considered important for the body's acid-base balance. The product does not use any kind of anti-caking agents. For this reason, some bags may feel harder than others.
The GI (glycemic index) of Indian sugar is low and therefore it is worth replacing at least part of the white sugar.
