The generator made from a roaster is designed specifically for cold smoking. The purpose is to give the meat, fish, vegetables or cheese a smoke aroma without cooking the ingredients.
Manual:
For cold smoking, use a charcoal grill with a closable grill hood or cover (e.g. ball grill).
Fill the cold smoke generator with fine chewing gum intended for cold smoking. Check that the "spiral pattern" of the generator is visible among the crumbs, so that the smoldering fire does not spread too quickly in the generator. Light the match and put it in the hole at the bottom of the generator. When you see smoke coming from the generator, remove the candle. The bite can also be carefully lit with the "brûlée burner" used in the kitchen. Place the cold smoke generator on the bottom of the grill and the ingredients to be smoked on the grate on top of the generator. Close the hood/lid of the grill.
The cold smoke generator produces smoke for about 8-10 hours.
Always take care of good hygiene when cold smoking, because the ingredients are not heated during smoking. Carefully follow the instructions of the recipe you are using when salting and other processing of raw materials, as well as when choosing the smoking temperature.
